Vinification: after a careful manual selection of the grapes, focusing on both ripeness and quality, the bunches are laid out on drying racks in the attic. Here,
the natural air circulation promotes the drying of the grapes while protecting them from fungal attacks. Once the sugar concentration reaches the optimal level (after
approximately 3 months), the bunches are destemmed and pressed. The resulting must is placed in 55 and 110-litre small barrels, which are immediately sealed.
Aging: at least 8 years in chestnut barrels
Food pairings: pecan pie, chocolate cakes, surprisingly delightful with blue cheeses, but also excellent on its own
